Koupes - Cypriot snack
This little delicacy, which resembles a croquette, is one of the classics among the Food from Cyprus . Actually intended as part of the meze platter, they also taste good as a snack in between.
INGREDIENTS:
Dough:
- 500 gr coarsely ground wheat
- 100 ml lukewarm water
- 1/2 tsp salt
- 1 tbsp fine flour
Filling:
- 1 onion
- 70 grams of parsley
- 1 pinch of salt
- 1 tablespoon vegetable oil
- 130 grams of minced meat
- 1 pinch of pepper
- pine nuts as needed
PREPARATION (for 25 koupes):
Dough: about three hours before preparation, put the wheat in a bowl, mix the lukewarm water with salt and drizzle over the wheat. Then sprinkle the flour over the mixture and let it soak for three hours covered with a cloth.
Filling: Fry the onion, minced meat and parsley in a pan with salt and pepper and oil Drain. Now knead the wheat dough and form small balls. These are flattened and covered with some filling. Now the dough pieces are shaped like eggs and fried in olive oil.
